Ripe firm berries, without traces of mold, are removed from stems and placed in a container, on a tray, on parchment paper covered with a paper towel or thick napkin. It's best to place strawberries in a single layer, as this significantly increases the probability of their long-term storage. Containers with berries should be stored in a special compartment of the refrigerator designed for vegetables and fruits. The temperature there never exceeds +2°C.
If you want to use berries for making desserts throughout the year, it's better to freeze them. Both whole berries and those sliced or pureed can be put in the freezer. You can add some sugar to the storage container, 200g for each kilogram of berries, then after thawing you'll get a delicious syrup in addition to strawberries.
You need to proceed as follows:
· berries are sorted, washed, and dried. Spread on a flat dish, they are slightly frozen in the freezer. This will preserve their integrity and shape after thawing;
· frozen strawberries are placed one by one in zip-lock bags, saving a little free space. Thanks to this, they won't stick together during storage into one lump;
· for baking, strawberry puree prepared in a blender is frozen. The finished mixture is poured into ice cube trays. You get portioned pieces of puree that can be used as you wish. Adding sugar is optional, but sprinkling the puree with lemon juice is definitely worth it – this way the color will be better preserved.
