Tart with frangipane cream and cedar nuts

  • Egg yolk

  • Almond Flour
    100 g
  • Lemon Juice
    50 ml
  • Walnuts
    40 g

Directions

  1. For the dough, mix together: flour with sugar, vanilla sugar, coconut sugar, a pinch of salt, and baking powder.
  2. Incorporate the very cold diced butter and egg, mix and form a ball.
  3. Roll out the dough in a 20 cm diameter tart pan.
  4. Shape the base and sides.
  5. Cover with parchment paper and add weight.
  6. Bake for 15 minutes at 170°C.
  7. Remove the weight and bake for another 5 minutes.
  8. Take out the dough and let it cool completely.
  9. For the Frangipane Cream: Mix the egg yolks with 25g sugar, vanilla sugar and lemon juice.
  10. Add the cream cheese, mix until obtain a smooth texture.
  11. Incorporate the almond flour and mix again.
  12. In another bowl, beat the egg whites with the remaining sugar for 8-10 minutes.
  13. Incorporate in a few slices into the egg yolks.
  14. Over the cooled crust, add the jam, spreading it over the entire surface.
  15. Add slices of apple, (previously peeled and core removed)
  16. Cover with the prepared cream and sprinkle with cedar nuts or your favorite nuts.
  17. Bake for 40-45 minutes at 170°C. Or until nicely browned.
  18. Take it out, let it cool, sprinkle with coconut flakes as desired, and enjoy. Enjoy!
