The most classic cheesecake is, of course, "New York". Its base consists of cookies with butter, and the delicate filling is made of cream cheese, eggs, cream, and sugar. For aroma, vanilla is added to the filling, and in some cases, lemon zest as well. But there are also many other variations and recipes - chocolate cheesecake, berry cheesecake, caramel, nutella, poppy seed. As a base for cheesecake, a crust made from crushed cookies is often baked. This crust not only serves as the bottom for the pie but also absorbs excess moisture from the cheese filling. By the way, it's recommended not only to cool the baked cheesecake at room temperature but also to keep it in the refrigerator for 8-12 hours. Only then will it slice well and, more importantly, fully reveal its taste.

With "cold" cheesecakes that aren't baked, everything is much simpler. Essentially, they are a kind of mousse based on cottage cheese or cream cheese, which maintains its shape thanks to the addition of gelatin or another gelling agent. Sometimes white chocolate is added to the filling to maintain shape. These cheesecakes are especially good in summer, with fresh berries or fruit sauces.
