Directions

  1. Mix the flour, dry yeast, eggs, sugar, and milk for about 15-20 minutes using a dough hook attachment or until the gluten window appears.
  2. Add the salt and the very cold butter, then continue mixing for another 5-7 minutes.
  3. Divide the dough into pieces of 35-40 grams each, shape them into balls, and place them in small molds.
  4. Cover with plastic wrap and let it rise for 30 minutes, or until it doubles in volume.
  5. Bake at 160°C until golden brown (40-50 minutes).
  6. Bring the water, sugar, brandy, cinnamon stick, star anise, cloves, and cardamom to a boil, and let it simmer for 5-10 minutes.
  7. Add the babas to the hot syrup and submerge them for about 2-4 minutes.
  8. The dessert can be enjoyed with a cream made from ricotta or white chocolate. Enjoy!
