  • Zucchini

  • Salt

Directions

  1. Preheat the oven to 180°C and line a 12-cup muffin tin with paper liners.
  2. In a large bowl, mix the oil, milk, and eggs.
  3. Add the flour, baking powder, salt, and thyme, and mix until combined.
  4. Fold in the grated zucchini and cheese.
  5. Divide the batter among the muffin cups, filling each about ¾ full.
  6. Sprinkle extra cheese on top, if desired.
  7. Bake for 20–25 minutes, until golden and a toothpick inserted in the center comes out clean. 🧁🥒 Enjoy!
