Directions

  1. For the filling: Mix the raisins with cognac and let them soften for 2 hours or overnight.
  2. For the dough: Whisk the sugar with vanilla essence, egg yolks, and whole egg for 4-5 minutes.
  3. In another bowl, mix the flour with the yeast, pour in the warm milk, and the beaten mixture.
  4. Mix and knead for 5 minutes.
  5. Add room temperature butter and knead for another 7-8 minutes.
  6. Cover with a towel and let it rise for 2 hours in a warm place.
  7. Divide the dough into 2 equal parts and roll each piece out into a very thin rectangular shape.
  8. Spread the entire surface with butter at room temperature.
  9. Mix the sugar with cinnamon.
  10. Drain the raisins of cognac very well.
  11. Sprinkle the dough with sugar, cinnamon, raisins and chopped almonds.
  12. Roll out the dough, cut it lengthwise in half, leaving a 1-2 cm margin at one edge.
  13. Shape the Cruffin. Roll the cake, making sure the cut part is always facing up.
  14. Transfer the Cruffins into baking pans, cover with a towel, and let them rise for 1 hour.
  15. Bake the sweet bread in the preheated oven at 180 °C for 30-35 minutes.
