Directions

  1. In a mixing bowl, whisk together the oil, eggs, sugar, lemon extract, and vanilla seeds.
  2. Add the kefir, then sift in the flour, baking powder, and salt. Mix until the batter is smooth and lump-free.
  3. Pour the batter into a 20x20 cm (8x8 inch) baking pan lined with parchment paper on both the bottom and sides.
  4. Arrange the sliced strawberries on top and bake for 40–50 minutes at 175°C (350°F), until golden and set.
  5. Let the cake cool completely before serving. Enjoy!
