Directions
In a well-heated saucepan with butter, sauté the onion and chopped garlic for 4-5 minutes.
Add the diced zucchini, pour in the water and boil for 10-15 minutes, or until the pumpkin is soft.
Transfer the mixture to a food processor, season with salt and pepper, add the chopped parsley and chopped toasted walnuts.
Mix everything until we get a smooth texture.
Serve the soup with breadcrumbs, garnish with olive oil if desired, chili flakes, and herbs.
