Sour cherry tart with almond cream

For the dough:

  • Butter Căsuța Mea 72,5%
    75 g
  • Powdered sugar
    70 g
  • Egg yolk
    3 pc
  • Flour
    160 g
  • Cocoa Powder
    20 g

For the cream:

  • Almond Flour
    135 g
  • Chicken egg
    2 pc
  • Vanilla Extract
    1 tsp
  • Сherry
    200 g
  • Butter Căsuța Mea 72,5%
    65 g
  • Powdered sugar
    135 g
  • Brandy
    15 ml

Directions

  1. Mix the softened butter with powdered sugar, add the egg yolks, mix.
  2. Sift the flour, cocoa powder, mix again until homogeneous.
  3. Wrap in plastic wrap and refrigerate for 2 hours.
  4. Mix the soft butter with powdered sugar, add the eggs and mix until smooth.
  5. Continue with almond flour, vanilla and Brandy.
  6. Transfer the cream into a pastry bag and refrigerate for 40 minutes.
  7. Roll out the dough to a thickness of 4 mm, transfer it to a 24 cm diameter tray, press the edges well, and cut off any excess dough.
  8. Add the cream over the cake, place sour cherries on top, and bake for 35-40 minutes at 180°C.
  9. After baking, let the tart cool completely.
  10. The tart is simply perfect, crispy dough and sweet-sour cream. Enjoy!
