🍋 For the dough:
Mix the flour with the sugar and lemon zest, add the butter with the egg, mix and shape into a ball.
Roll out the dough in a 20 cm diameter pan, raise the sides by 2 cm, and put it in the freezer for 30 minutes.
Cover with parchment paper, add weight, and bake for 15 minutes at 200°C, remove the weight, and bake for an additional 7 minutes (or until golden brown).
🍋 For the cream:
In a saucepan, mix the sugar with the cornstarch, add the orange zest, orange juice и 130 ml water, mix, pour in the remaining water.
Put it on the stove as soon as it boils, boil for 1 minute.
Add the mixed egg yolks, mix them, boil for 1 minute, whisk vigorously, add the butter, mix again.
Let it cool down and add the cream over the cake.
For meringue:
Whisk the egg whites with sugar and salt for 10-12 minutes.
Cover the tart with meringue and bake in the oven for 10-15 minutes or until lightly browned.
