Appetizers with eggplant and mozzarella

  • Eggplant

  • Tomato sauce
    100 g
  • Mozzarella Căsuța Mea for Pizza and Sandwiches
    50 g
  • Olive Oil
    20 ml
  • Basil
    to taste
  • Salt
    to taste
  • Black Pepper
    to taste

Directions

  1. Cut the eggplant into slices.
  2. Drizzle olive oil on both sides of the slices.
  3. Coat each slice in breadcrumbs.
  4. Arrange the slices on a baking tray.
  5. Sprinkle with salt and red pepper.
  6. Bake for 15 minutes at 180 °C, fan setting.
  7. Add tomato sauce, slices of mozzarella, fold it in half, and return it to the oven for another 5-7 minutes, or until the mozzarella melts.
  8. Decorate with basil and enjoy. Enjoy!
