Preparation of the potatoes: Peel and slice the potatoes very thinly, using a mandoline to achieve uniform slices.
Grease a baking dish with butter (if you wish) and arrange the sliced potatoes in an even layer.
In a bowl, mix the sweet cream with the sour cream, then add salt, black pepper, and thyme to taste.
Pour the prepared sauce over the potatoes, making sure to cover all slices well.
Grate the mozzarella and sprinkle it evenly over the potatoes.
Cover the tray with aluminum foil and bake in the preheated oven at 205°C for 90 minutes. After this time, remove the foil and bake for an additional 7-10 minutes to obtain a golden and crispy crust.
Let the potatoes cool for a few minutes before serving.
