Directions

  1. ✅ For the starter, mix the yeast with 1 teaspoon of sugar, 50 grams of flour, and warm milk, cover it, and leave it in a warm place for 1 hour.
  2. In a bowl, mix: the egg with the yolk, the remaining sugar, softened butter, flour, salt and kefir.
  3. ✅ Add the sourdough, mix again, knead and shape into a ball, place the dough in an oiled bowl, cover with plastic wrap, put in a warm place and let it rise until it doubles in size.
  4. ✅ For the crumbly dough, grind the flour with the sugar, vanilla sugar, and butter, until the dough's texture becomes crumbly.
  5. ✅ For the cream, in a bowl mix the egg with the sugar, vanilla sugar, cornstarch, and flour.
  6. ✅ Pour the hot milk, stir until there are no more lumps, pour into a saucepan, and cook until it thickens, about 1 minute, then let the cream cool completely.
  7. ✅ Divide the already risen dough into 10 equal pieces, shape them into balls, transfer them onto a baking tray lined with parchment paper, let them rise for 35-40 minutes, make some indentations using a glass greased with oil.
  8. ✅ Brush the buns with beaten egg, add the cream, then the favorite berries, sprinkle with the crumbly dough, and bake for 20-25 minutes at 190°C. Enjoy!
