In a bowl, put the flour, add the salt, crack the eggs, pour in room temperature water mixed with a spoon, (the flour may vary and you may need less water).
Pour the oil, knead the dough, cover with a towel, and let it rest for 30 minutes.
The dough will become soft, elastic, and flexible.
For the filling, mix the cottage cheese together with the eggs and salt.
Divide the dough into 4 pieces, shape them into balls, and roll out each one thinly on a floured surface.
Cut square shapes, add the filling, and seal the dumplings.
Take the largest pot you have in the house and boil the water.
Add the dumplings, cover with a lid, and once they come to a boil, remove the lid and cook for 2-3 minutes.
Drain the dumplings of liquid and enjoy them with sour cream (caramelized onions or fried onions).
