Directions
For dough, mix, sifted flour, sugar and salt.
2. In another bowl, mix, fresh yeast, 1 teaspoon- sugar & warm milk. I let for 5 minutes to activate.
Over the dry mixture, shave the bark of the oranges, add the yolks, vanilla and activated yeast, mix then knead 25-30 minutes.
Pour the oil and knead for 10 minutes.
Cover the dough with foil and let it grow 60-90 minutes, in a warm place.
For filling, mix, chopped walnuts, cocoa powder, sugar and whites.
Divide the dough into 6 equal pieces, spread thin in a rectangular shape.
We add the filling, spread all over the surface and roll, the same we do with the other pieces.
We overlap 2 rollers in X, then run.
We transfer to trays, cover with a film and let it grow 1 hour.
Grease the cozonacs with beaten egg and bake, 10 minutes- temperature 160 C.
We raise the temperature to 170 C and bake 50 minutes.
