Directions
For the dough, mix the sifted flour, sugar, and salt.
In another bowl, mix fresh yeast, 1 teaspoon of sugar, and warm milk. Let it activate for 5 minutes.
Grate the orange zest over the dry mixture, add the egg yolks, vanilla, and activated yeast, mix well, then knead for 25-30 minutes.
We pour the oil and knead for another 10 minutes.
We cover the dough with plastic wrap and let it rise for 60-90 minutes in a warm place.
For the filling, mix the chopped nuts, cocoa powder, sugar, and egg whites.
Divide the dough into 6 equal pieces, roll out thinly into a rectangular shape.
We add the filling, spread it over the entire surface, and roll it up, doing the same with the other pieces.
We overlap 2 rolls in an X shape, then roll them up.
Transfer to trays, cover with plastic wrap, and let rise for 1 hour.
Brush the Easter cakes with beaten egg and bake for 10 minutes at 160°C.
We increase the temperature to 170 C and bake for another 50 minutes.
