Directions
In a saucepan over medium heat, melt the sugar.
Pour the hot cream and stir vigorously.
Take it off the heat, add the salt together with the bloomed gelatin.
When it reaches a temperature of 50°C, add the softened butter and mix.
Transfer the cream into jars and refrigerate until it sets.
The cream is perfect for cakes, pastries, brioches, and pancakes.
