Directions

  1. In a saucepan over medium heat, melt the sugar.
  2. Pour the hot cream and stir vigorously.
  3. Take it off the heat, add the salt together with the bloomed gelatin.
  4. When it reaches a temperature of 50°C, add the softened butter and mix.
  5. Transfer the cream into jars and refrigerate until it sets.
  6. The cream is perfect for cakes, pastries, brioches, and pancakes.
