Directions
Pass the cottage cheese through a fine sieve to achieve a smooth, creamy texture without lumps.
Pour hot heavy cream over the milk chocolate. Once the chocolate starts melting, add the nut paste and trimoline. Blend until smooth and creamy.
Using a silicone spatula, gently fold the cooled chocolate cream into the cottage cheese until fully combined.
Fill the bunny molds up to 2/3 full. Tap the molds lightly on the table to remove air bubbles. Add caramel to the center of each bunny, then cover with the remaining cream and smooth the surface. Freeze until completely set.
Once frozen, remove the bunnies from the molds, place them on egg-shaped cookies, and let them thaw fully in the refrigerator.
