Directions
Beat the eggs with 3-4 tablespoons of chopped parsley, seasoning with salt and pepper to taste.
Cut the chicken breast in half lengthwise.
Transfer onto cling film and flatten using a hammer.
Dredge the breast in flour, then dip it into beaten eggs, and fry it in a well-heated pan with oil and butter, 4 minutes on each side.
Take it out on a plate and let it rest.
In the same pan, pour the wine with water, chopped garlic, squeeze the lemon juice, boil for 2 minutes at high temperature or until reduced in volume.
Add 2 tablespoons of butter with the remaining chopped parsley, mix until melted, turn the chicken breast, and simmer for another minute.
Serve the chicken breast with sauce, parsley, and parmesan. Enjoy!
