Directions

  1. Beat the eggs with 3-4 tablespoons of chopped parsley, seasoning with salt and pepper to taste.
  2. Cut the chicken breast in half lengthwise.
  3. Transfer onto cling film and flatten using a hammer.
  4. Dredge the breast in flour, then dip it into beaten eggs, and fry it in a well-heated pan with oil and butter, 4 minutes on each side.
  5. Take it out on a plate and let it rest.
  6. In the same pan, pour the wine with water, chopped garlic, squeeze the lemon juice, boil for 2 minutes at high temperature or until reduced in volume.
  7. Add 2 tablespoons of butter with the remaining chopped parsley, mix until melted, turn the chicken breast, and simmer for another minute.
  8. Serve the chicken breast with sauce, parsley, and parmesan. Enjoy!
