Directions

  1. In a large bowl, whisk the eggs with the cream, salt and black pepper. Add the chopped green onions and mix well.
  2. Melt the butter in a large pan over low heat.
  3. Once the butter is fully melted and starts to foam, pour in the egg mixture.
  4. Cook over low heat, stirring continuously, until the eggs are soft and creamy. Do not overcook; they should remain moist and tender.
  5. Spread cream cheese on the toasted bread.
  6. Spoon the scrambled eggs over the cream cheese toast.
  7. Sprinkle with extra green onions for freshness and color.
  8. Tips: For extra creaminess, add a little more cream or cream cheese to the eggs. Cream cheese can be replaced with smoked salmon if desired.
