Directions
Grate the zucchini until it reaches the same consistency as mine. I used the finest grater.
Drain as much water from the zucchini as possible. You can do this using cheesecloth.
In a blender, combine spinach, egg, a little salt, flour, milk and baking powder.
Add another 1 1/2 tablespoons of flour (or as much as needed to achieve the consistency shown in the video), stir, then add the grated zucchini.
Mix everything thoroughly and heat a frying pan with a little oil.
Fry the pancakes on both sides, and I advise you not to make them too big, so that they are easier to flip.
Serve pancakes for breakfast with sour cream. They're very colorful and appealing. Plus, they're healthy!
