Directions

  1. Heat a pot or a deep skillet with olive oil. Add the finely chopped onion and garlic, and sauté them for about 1 minute, until they become slightly translucent.
  2. Add the carrots and potatoes, cut into small cubes, and cook for a few minutes, stirring, until they are lightly browned.
  3. Add the shrimp cut into suitable pieces and cook them for about 30 seconds. Pour in the broth and let it simmer until the vegetables become tender.
  4. Add the corn, Cheddar cheese, and sour cream. Mix well, then season with salt and pepper to taste.
  5. Take the soup off the heat and serve it hot, sprinkled with freshly chopped dill. Enjoy! 🍲✨
