Directions

  1. Beat the egg whites with brown sugar for 10 minutes.
  2. Add the cocoa powder, flour, and wild hazelnut powder, mix and transfer to a pastry bag.
  3. Place the dough on a baking sheet and bake at 170°C until the dough is still soft but already elastic.
  4. Pour the very hot cream A over the milk chocolate, nut paste and swollen gelatin, blend with a vertical blender, add the cream B, beat.
  5. Cut out the top with a diameter of 16 cm, spread cling film over the ring, place the top and fill with mousse, then put in the freezer.
  6. Bring the cherry puree to the boil, add the soaked gelatin, mix and pour over the almond mousse and freeze again.
  7. Pour boiled milk with raspberry chocolate drops and soaked gelatin, stir.
  8. When the mass cools to a temperature of 30 °C, add the cream cheese, blend with a blender, add the whipped cream and mix gently with a spoon.
  9. Pour the mousse into a silicone mold with a diameter of 18 cm.
  10. Add the frozen filling and freeze for 3-4 hours, then refrigerate for 9-10 hours.
  11. Decorate according to preference. Enjoy!!!
