Directions

  1. Slice the eggplants into medium-thick rounds. Sprinkle salt on both sides and leave for 10 minutes to remove the bitterness.
  2. Meanwhile, prepare the filling: mix the cream cheese with sour cream, crushed garlic, and finely chopped parsley. Season with salt and pepper.
  3. Fry the eggplant slices in hot oil on both sides until golden and tender.
  4. Spread the cheese cream on half of each slice, then fold it like a taco.
  5. Roll the edges in chopped walnuts mixed with parsley. Enjoy this simple appetizer with rich flavors and beautiful contrasting textures!
