Directions

  1. First, melt the butter until it reaches a temperature of 45-50°C.
  2. Then, in a bowl, beat the eggs, sugar, and trimoline (which can be replaced with the same amount of sugar), using a whisk.
  3. Pour the vanilla essence, grate the lemon zest.
  4. Continue with the flour and baking powder.
  5. Pour the melted butter and lemon juice.
  6. Mix, then cover with plastic wrap directly touching the dough, and refrigerate for 6-8 hours.
  7. Fill the Madeleine molds to 70-80% of their volume with batter. (previously greased with butter and dusted with flour)
  8. Bake the cookies for 15-18 minutes at 190 °C.
  9. Let it cool for 10 minutes, then using a brush, glaze the surface and can enjoy it with pleasure. Enjoy!
