For the base:

  • Flour
    125 g
  • Cocoa Powder
    30 g
  • Sugar
    150 g
  • Butter Căsuța Mea 82,5%
    50 g
  • Milk Căsuța Mea Premium 3.4% - 6.0%

  • Espresso coffee
    100 ml
  • Baking powder
    1/2 tsp
  • Baking soda
    1/4 tsp
  • Salt
    1 pinch
  • Cherry liqueur
    1 tbsp
  • Chicken egg
    1 pc

For the mousse:

  • Cream Cheese
    300 g
  • Whipping Cream Căsuța Mea 33%
    300 ml
  • Gelatin
    15 g
  • Water
    75 ml
  • Lemon Juice
    1 tbsp

For the sauce:

  • Сherry
    250 g
  • Gelatin
    5 g
  • Water
    1 tbsp

Directions

  1. For chocolate cake mix: flour, baking powder, baking soda, cocoa powder and salt.
  2. Beat the sugar with the butter and egg until you get a fluffy texture.
  3. Add half of the solid composition and mix.
  4. Pour the milk, hot coffee and liqueur as desired.
  5. Continue to mix, incorporating the remaining solid mixture.
  6. Pour the dough into the mold, bake in the preheated oven for 25-30 minutes, at a temperature of 180 °C.
  7. Let the cake cool completely and remove from the pan.
  8. Cherry sauce. Mix gelatin with water.
  9. In a saucepan, add the cherries and sugar, and place over low heat until the sugar melts.
  10. Add the swollen gelatin, stir until it dissolves.
  11. CHEESE MOUSS Mix the gelatin with water, let it swell for 10 minutes.
  12. Melt the gelatin and let it cool completely.
  13. In another bowl, add: cream cheese and whipped cream, mix for 4-5 minutes.
  14. Pour the previously melted gelatin into the microwave for 15-20 seconds and then cool to room temperature.
  15. Mix 1-2 minutes.
  16. ASSEMBLING THE CAKE: Level the surface of the cake, transfer it to a ring platter.
  17. Add the cherries drained from the sauce over the top, add the cream cheese.
  18. Level the surface.
  19. Pour the remaining sauce over the mousse.
  20. Refrigerate the cheesecake for 4-5 hours or overnight.
  21. Run a knife around the edge of the mold, remove, and decorate as desired with fresh or freeze-dried fruit, rose tea, or decorative candies.
