Directions

  1. For the dough, mix all the ingredients and form a ball.
  2. Divide into 2 pieces (1 larger, the 2nd smaller). Wrap with cling film and refrigerate for an hour.
  3. Grate the large piece of dough into a 20 cm diameter pan. Place in an even layer on the base.
  4. Bake for 10 minutes at 190 °C. Remove and let cool completely.
  5. For the filling, mix sour cream with vanilla sugar and corn starch.
  6. In another bowl, beat the egg whites with the sugar until the texture becomes white and glossy.
  7. Add the sour cream mixture on top, mix everything together.
  8. Pour over the dough, sprinkle with raspberries and grate the remaining dough.
  9. Bake the cake for 40-45 minutes at 160 °C. Remove the cake, cool it and refrigerate for 3 hours. Decorate with berries and mint if desired.
  10. Serve the cake with pleasure.
