Directions
In a pot of salted water, add the asparagus cut into 2.5 cm slices. Boil for 5 minutes.
Take out the asparagus and put it in very cold water.
In a well-heated pan, add the butter and olive oil.
Add finely chopped onion, sauté for 5 minutes, add the rice and sauté for another 4-5 minutes.
Pour the wine, mix until absorbed. Pour a little bit of broth at a time, until fully incorporated.
Season with salt and black pepper, then mix.
In a bowl, mix together: sour cream, hard cheese, and lemon zest.
Add over the rice, mix until incorporated.
In the end, add the drained asparagus and finely chopped parsley.
