Directions

  1. 1. For the biscuits, mix the soft butter with the white sugar and the brown sugar.
  2. 2. In another bowl, mix the flour, salt, baking powder, and spices.
  3. 3. Combine the ingredients together, add the nut paste, form the dough, and chill it for 30 minutes.
  4. 4. Roll the dough out to a thickness of 3 mm, cut out 5 cm shapes, and bake them for 12-14 minutes at 165°C, then let them cool completely.
  5. 5. For the meringue, soak the gelatin sheets in very cold water, leaving them for 10 minutes.
  6. 6. In a bowl, combine the egg whites with the sugar, place it over a steam bath, and heat until it reaches 65 °C.
  7. 7. Add the well-drained gelatin sheets, the baking powder, and the vanilla.
  8. 8. Beat with a mixer for about 10 minutes, until the meringue becomes thick and glossy.
  9. 9. Transfer the meringue into a piping bag, cover the cooled biscuits with the meringue, and let it sit at room temperature for 1 hour.
  10. 10. Dip the Marshmello cookies into the mixture of melted chocolate with cocoa butter.
  11. 11. Let the excess chocolate drip off, transfer onto a rack to set. Enjoy!
