Directions

  1. Place the pork in a bowl, cover with kefir and let marinate for about 2 hours.
  2. In a saucepan, pour the water, add the salt, chili pepper, thyme, black pepper, bay leaves and coriander.
  3. Bring to the boil and boil for 1 minute.
  4. Let it cool to room temperature.
  5. Remove the meat from the kefir and add to marinade no. 2.
  6. Leave it in the refrigerator for 7-8 hours.
  7. Meanwhile, prepare marinade no. 3.
  8. Remove the meat from the marinade and dry well with paper towels.
  9. Mix all the ingredients together and coat the meat well.
  10. Let it marinate for 30 minutes.
  11. Wrap the meat in 3 layers of metal foil and bake for 1 hour 30 minutes at 180 °C.
  12. Remove the foil from the surface and bake for another 20-30 minutes.
  13. Remove, let cool slightly, cut and serve with pleasure.
