For the dough:

  • Chicken egg

  • Milk Căsuța Mea 2,5%
    220 ml
  • Flour
    130 g
  • Sugar
    2 tbsp
  • Salt
    1 pinch
  • Butter Căsuța Mea 82,5%
    20 g

For brushing:

  • Butter Căsuța Mea 82,5%
    40 g

For the filling:

  • Quince
    3 pc
  • Butter Căsuța Mea 82,5%
    20 g
  • Sugar
    20 g
  • Vanilla
    to taste

Directions

  1. For the filling, melt the butter together with the sugar and vanilla.
  2. Add the quince, sliced, and caramelize them until they soften slightly.
  3. For the dough, beat the eggs together with the sugar and a pinch of salt.
  4. Add the flour and gradually pour in the milk, stirring until you obtain a smooth batter.
  5. Let the dough rest for 10 minutes.
  6. Meanwhile, heat a baking dish or an ovenproof skillet thoroughly at 220°C.
  7. Add the butter to the hot pan, pour in the batter, place the caramelized quince slices on top, and bake for 15–25 minutes, until the pancake rises beautifully at the edges and turns golden brown.
  8. Serve the pancake warm, plain or with a scoop of ice cream, according to your preference. Enjoy!
