Mix 3 eggs, 40 g of sugar, 1 tablespoon of vanilla essence and 2 g of salt in a bowl.
Pour in half of the milk and add 250 grams of already sifted flour, continuing to mix until there are no more lumps and we have a smooth mixture.
Pour in the remaining milk and 2 tablespoons of oil.
Mix easily.
Pour a small ladle of the mixture into a well-heated pan with a drop of oil.
We continue like this until we finish the dough composition.
For the orange sauce: grate the peel of two oranges and drain 150 ml of juice.
In a saucepan, melt 80 g of butter with 80 g of sugar.
Pour in the squeezed orange juice and grated zest.
Boil the sauce for 10 minutes over medium heat.
Meanwhile, place the folded pancakes in a pan, pour in the sauce, and cook over low heat under the lid for 5 minutes, to simmer and for the pancakes to absorb the aroma and taste of the sauce.
