For the filling:

Directions
Mix warm milk with 2 tablespoons of sugar and 2 teaspoons of dry yeast.
Add 3 tablespoons of flour and mix again.
Cover the bowl with a towel and place it in a preheated oven at 50 °C with the door closed.
Mix one egg with 2 tablespoons of sugar, a pinch of salt, and melted butter.
Add the yeast-milk mixture and mix well.
Gradually add the flour, sifted beforehand to avoid lumps. Stir in the flour with a spatula, then knead the dough with your hands.
Grease a bowl and place the dough in it. Cover with a towel and place in a preheated oven at 50 °C with the door closed for 2 hours.
For the filling, combine the butter, brown sugar, and cinnamon.
Spread the dough out on a countertop and spread the filling on top. Roll the dough out evenly and carefully cut into rolls.
Place them on a baking sheet, cover with a towel and leave for 15 minutes, then place in the oven for 20 minutes at 180 °C.
For the cream, mix mascarpone with 2 tablespoons of milk, powdered sugar and lemon juice until smooth.
Spread the warm buns with cream—it'll melt and become even more delicious. Serve them immediately with a warm autumn drink.
Look how fluffy the dough is! You can add nuts to the filling if desired.
