Directions
In a vessel we mix until we receive a fluffy texture butter at room temperature, powdered sugar, yolks, cinnamon and Rom.
Add the sifted flour, ground almonds, baking powder and salt.
We mix the dough and divide into 3 equal parts.
We cover each dough nut in food foil and cold for at least 2 hours.
We are preparing the apples. In a pan we melt the butter, add the powdered sugar, cinnamon & peeled apples cut into cubes.
Calim until the apples become slightly caramelized.
We return to the dough. Spread each piece between 2 baking sheets, cut circles with diameter 20 cm.
Bake each sheet 10-12 min in the preheated oven at temperature 180 C.
For mousse. In a saucepan we pour the whipped cream and add the cinnamon stick, put on the hob until the boiling point.
Pour the whipped cream over the drops of chocolate or chopped chocolate, mix until all the chocolate melts.
Beat the whites with the sugar until they become white and glossy.
Add the whites over the chocolate and mix with circular movements from the bottom up.
Over the mousse add the apples and mix (I recommend filling in the refrigerator for 30 minutes).
On a platter we place in layers: 1 countertop- 1/3 of the cream and 1 countertop- 1/3 of the cream, the 3rd countertop and the remaining cream.
We give the refrigerator for 3-4 hours.
Before serving we press with cocoa powder and decorate the edge with the remaining sides from already shredded countertops.
