Directions

  1. Sauté the chopped onion in the oil for 3-4 minutes, add the tomato sauce, and season with salt and black pepper to taste.
  2. It simmers over low heat for 30-35 minutes.
  3. Cut the eggplant into thin slices, season with salt on both sides and fry in oil until lightly browned.
  4. In a baking dish, add 2-3 tablespoons of sauce, layer slices of eggplant, tomato sauce, sprinkle with Parmesan and mozzarella.
  5. Continue until finished, bake for 40-45 minutes at 190 °C.
  6. Serve warm eggplant with fresh basil. Enjoy!
