Peel the potatoes și cut them into pieces.
Transfer to a saucepan, cover with water, add 1 teaspoon of salt, boil for 10-11 minutes at medium-high temperature. Then drain the water.
Add the butter with lard in a baking tray, put it in the oven for 10 minutes, at 220 °C.
Add the potatoes to the tray, season with salt, add a sprig of thyme, and bake for 35-40 minutes, or until they are golden and crispy, stirring occasionally.
Take out of the oven, season with black pepper to taste, sprinkle with thyme, and enjoy the crispy potatoes.
