Directions
In a saucepan, add the cranberries with sugar, mix the cornstarch with water, and pour over the cranberries.
Put the pot on the stove, stir regularly, and once it comes to a boil, we boil for 1 minute.
Transfer the filling into a dish, cover it with cling film directly touching the berries, and let it cool completely.
Mix with a whisk, blender, or mixer: the eggs, sugar, a pinch of salt, half of the milk, and the sifted flour until there are no more lumps.
Incorporate the remaining milk and oil.
Fry the pancakes on a well-heated pan over medium heat on both sides.
In the bowl of a food processor, mix all the ingredients until we obtain a smooth texture.
Transfer 2/3 of the cream into a pastry bag.
Assemble the cake: Place the ring of a 21-22 cm diameter mold on a platter.
Place 8 pancakes both around the edges and at the base.
Add 1/3 of the cheese cream and spread it both on the sides and on the base.
Fill 4 pancakes with the berry filling, then add the cheese filling from the piping bag on top.
Place the pancakes in the mold, spreading the cream cheese in the empty spots.
Lay a pancake over the entire surface.
Layer once again 4 crepes filled with berries and cream cheese.
Add the remaining cream, spread it in some places, and cover the cake with the pancakes from the edges, placing them nicely.
Put the cake in the fridge for 5 hours or overnight.
Remove the ring, decorate with cranberries and candies.
The pancake cake is ready!
